Banana Bread Oat Cookies


A while back I was asked by a friend if I wanted to have a Food Intolerance Test done. A sensible person would have done proper research before agreeing to a test but I quickly said yes!

What is Food Intolerance?

It is your body's abnormal reaction to certain foods which can manifest itself in a number of ways. Some people will have one symptom such as severe headache whilst others will be unfortunate to experience irritable bowel syndrome, migraine and skin or respiratory conditions. Unlike the immediate reactive symptoms of food allergy, food intolerance symptoms often appear hours or even days later.

What happens when we eat food that our bodies don't agree with?

  • Bloating, Diarrhea or IBS
  • Headaches
  • Chronic Fatigue
  • Depression or Anxiety
  • Skin Problems
  • Weight Control
  • Arthritis

Cooking brings me so much joy but it was good to know that there is an actual explanation why we feel sluggish, bloated, etc. when we eat certain foods. 

On testing day, I woke up earlier than usual and I went to the nearest Hi-Precision Diagnostics clinic. This test does not require fasting of any sort, which is great! After a quick prick on the finger, I went ahead with my daily routine. All I had to do was wait for the results.

I was invited to an intimate luncheon where I met the nice people from Hi-Precision Diagnostics as well as Dr. Julien Kirby who conducted a short presentation on Food Intolerance. After our lunch (also known as "Last Supper"), we were anxious about the results. When they handed it to us, we got a bit stressed, being told what you can and can't eat is not always (or at all!) fun. But in the name of health, I was completely open to it! 

We all compared notes and what  most of us were intolerant to are the following: wheat, milk, eggs and nuts. I know that makes up EVERYTHING we eat on a daily basis especially wheat.

Mish of and I were most concerned about baking. No flour, no eggs and no butter. What?!?! Well, with necessity comes creativity and here's an example of one work-around recipe that does not contain the food that I'm intolerant too. It's a vegan, gluten-free, sugar-free cookie that is crunchy and chewy at the same time! Yey for healthy treats!

Banana Bread Oat Cookies


  • 1 medium banana, mashed
  • 1 cup rolled oats
  • 1 cup walnuts, roughly chopped
  • 1 Tbsp. coconut oil
  • 2 Tbsp. raw honey
  • 1/4 tsp. cinnamon, ground
  • Pinch of salt


  1. Preheat oven to 350 degrees farenheit.
  2. Place the mashed banana, rolled oats, coconut oil,honey, walnuts, cinnamon and salt in a bowl.
  3. Mix thoroughly and leave for 10-15 minutes.
  4. In a baking pan lined with parchment paper, use an ice cream scooper to portion out the oat mixture. Drop on lined baking pans and flatten a little.
  5. Bake in the oven for 15-18 mins.
  6. Let cool and serve.
