Mexican-Style Grilled Corn


Another market to table dish devoured by my boys! MEXICAN-STYLE GRILLED CORN! This went perfectly with our Taco lunch last Sunday. In fact, my husband and I hardly touched the tacos!

Is it messy to eat? YES!

Is it easy to make? YES!

Is it yummy? ABSOLUTELY!!! (I honestly wanted to swear in between abso- and -lutely, but I stopped myself!)

You know what, I think my husband fell in love with me again after having a bite of this. This should be on my menu every week!


Mexican-Style Grilled Corn


  • 4 ears of Corn, in the husk
  • 1/4 cup Mayonnaise
  • 1/4 cup Feta cheese, crumbled
  • 2 Tbsp. Parmesan cheese
  • 1 clove Garlic, crushed
  • 1-2 Tbsp. Lime juice
  • 1 tsp. Cayenne pepper
  • Sea salt


  1. Boil corn (with husks) in water and sea salt for about 20-25 mins. Set aside.
  2. Mix mayo, half of the crumbled feta cheese, parmesan cheese, cayenne pepper, crushed garlic and lime juice in a small bowl.
  3. Pull back corn husks from the slightly cooled ears of corn.
  4. Start your grill or heat your pan. Grill for a few minutes on each side.
  5. Brush feta-mayo mixture on all sides of the corn. Use the remaining crumbled feta cheese as garnish and a few dashes of cayenne pepper. Serve.
