Whole Wheat Spaghetti with Seared Cream Dory and Ricotta Cheese

This is the final installment of the homemade ricotta cheese series, not because I've run out of ideas but because I've run out of ricotta cheese! There are so many recipe possibilities when it comes to ricotta cheese and I truly enjoyed writing (and eating) about it.

The previous recipes might have been a bit more complicated but I promise you, this is the simplest one.

Whole Wheat Spaghetti with Seared Cream Dory and Ricotta Cheese

  • 2 Cream Dory fillets, cut into bite-sized pieces
  • 1 cup cherry tomatoes, cut in half
  • 3 cloves garlic, crushed
  • Zest of 1 lemon
  • 1/3 cup homemade ricotta cheese
  • 500 grams Whole Wheat Spaghetti (but any pasta will do), cooked
  • Olive oil
  • Salt and Pepper, to taste

  1. Heat olive oil and crushed garlic on low heat for 3 minutes or until the garlic aroma has started to surround the kitchen. Be careful not to brown the garlic. Scoop out the garlic.
  2. Adjust the heat of the pan to medium-high heat and sear the fillets for about 2 minutes per side or until golden. Remove fillets from pan when cooked.
  3. Toss the cooked spaghetti and ricotta cheese in the same pan and saute for about 2 minutes to let the ingredients "dry" up a bit.
  4. Toss in remaining ingredients except for the lemon zest. Season with salt and pepper.
  5. Plate and top with the lemon zest.
